IT'S BREAKFAST PATTY PATTY TIME! (sung to the tune of the "Peanut Butter Jelly Time" song)

I've come up with a yummy, filling breakfast patty recipe...of course wheat and grain free! Can also be vegan, if you don't use butter for the topping...see below! 

Here's the rundown:
In a cereal bowl, mix:
1/2 cup almond meal
2 tbsp ground golden flaxseeds (Bob's Red Mill is an excellent brand)
2 tbsp chia seeds
2 packets Truvia * OPTIONAL * (they taste good with or without the Truvia, I just like the little extra sweetness)
Generous pinch unsweetened coconut flakes
Unsweetened almond milk 

Mix the dry ingredients in the bowl. Add just enough almond milk to combine the dry ingredient into a "dough." The chia seeds really help with this - when you add liquid to them, they thicken and get kind of glutinous. Divide the "dough" in two, shape with your hands into 2 patties. Pan fry in the (healthy!) oil of your choice (I usually use olive oil, but will be trying them next with coconut oil) until crispy/golden on both sides. 

Now comes the really fun part....adding the toppings. Here's what I usually do:
Top the patties with butter
Sprinkle with cinnamon/stevia blend (I mix Trader Joe's stevia or Truvia with The Pampered Chef Cinnamon Plus spice blend in a glass spice jar - Penzey's sells them)
Nuke the topping in the microwave for a few seconds until warm
Top with pecans and EAT UP!

OR if you want a savory breakfast, leave the Truvia out of the patty recipe and top with GOAT CHEESE....YUM!!
